The Gingerbread Man Project turned out much better this year. We did have one munchkin nibble on the decorations the entire process, but the supply was rather large. I accounted for the snacking during the festivities, which helped. If you compare the results from last year and this year, I think you’ll agree they turned out better this year. What You Will Need and You Already Have:
2 egg whites
3 C confectioner’s sugar
¼ tsp cream of tartar
¾ C brown sugar
3 C flour
1 ½ tsp baking soda
1 ½ tsp baking powder
¼ tsp salt
2 tsp cinnamon
1 T ground ginger
¼ tsp ground cloves
¾ C molasses
¾ stick of butter, softened
1 egg
2 tsp vanilla
Large bowl
Medium bowl
Sifter
Cookie sheets
Parchment paper
Plastic wrap
1) Preheat oven to 375˚. Line cookie sheets with parchment paper.
2) Sift together flour, cinnamon, ginger, cloves, salt, baking powder and baking soda.
3) Beat together 1 egg, sugar, butter and vanilla. Mix in flour mixture.
4) Form to balls with dough and wrap with plastic wrap. Chill in fridge for 2 hours.
5) Roll out dough and cut out shapes with cookie cutters.
6) Bake for 10-12 minutes.
7) Cool.
8) Prepare icing. Beat egg whites until peaks form in whites. Add cream of tartar and 3 C powdered sugar.
9) Decorate cookies.
10) Serve.
