Sweet and Savory Grilled Stuffed Chicken





When someone in your family continuously compliments you about dinner, you know you’ve done something right. The hilarious thing about this one is that I found the recipe at the last minute while I was in the parking lot at the grocery store. AND while I was constructing it, I was cursing because I was so frustrated with the toothpicks.
Lucky for you, there’s no reason to get frustrated. No reason to waste your time pounding the chicken too thin or using toothpicks. Use wooden skewers to keep the chicken together and don’t pound the chicken until it’s filled with holes.
I promise you this is one of the best chicken dishes you will ever eat.

What You Will Need:


1-½ lb boneless, skinless chicken breasts
1 C dried apricots
6 T apricot preserves
2 celery stalks, leaves removed, chopped


What You Already Have:
½ yellow onion, chopped
1 garlic clove, minced
½ C Savory Herb Stuffing Mix
2 T white distilled vinegar
1 T canola oil
1 tsp ground ginger
plastic wrap
large wooden rolling pin
wooden skewers
small saucepan
small dish
grill


1) Heat canola oil over medium heat. Add onion, garlic and celery. Cook until onion is translucent.
2) Add stuffing, apricots, 3 T preserves and ginger to onion mixture. Remove from heat.
3) Place chicken breasts in between plastic wrap and pound with rolling pin until thin.
4) Lay out chicken. Add stuffing mixture to center of chicken. Wrap chicken and secure with skewers.
5) Prepare grill.
6) Prepare bbq sauce. Mix 3 T preserves with vinegar.
7) Cook chicken for 10 minutes a side, brushing with bbq sauce in between.

Wow, this looks really good. I've never prepared "stuffed" chicken before so it was interesting to see the photos for how it's done. My only thought is that I don't like apricots or anything that tastes like them...including peaches. So I'm wondering what a good replacement would be for that ingredient? I really want to try this out. You make it look so easy!
