My chicken noodle soup was so good last week that I wanted more! Instead of making the same thing, I made something similar with a little twist. I called it a “pasta e fagioli” because technically it was. I used orzo, lentils and cannellini beans. It turned out to be almost better than the chicken noodle soup. See what you think…
What You Will Need:
½ lb orzo
2 oz Virginia ham, cubed
1 (15 oz) can of cannellini beans
1 C dried green lentils
½ yellow onion, finely chopped
3 carrots, chopped
4 celery, chopped
1 C fresh baby spinach
What You Already Have:
1 large garlic clove, minced
1 tsp dried rosemary
1 tsp dried oregano
1 tsp dried parsley
2 ½ qt water
6 chicken bouillons
1 tsp salt
½ tsp freshly ground black pepper
2 T olive oil
½ C freshly grated parmesan
large non-stick pot
1) Heat olive oil in pot over medium-high heat.
2) Add carrots, celery, onion and garlic to pot. Cook until onions are translucent.
3) Add water, bouillons, parsley, rosemary, oregano, salt and pepper. Bring to boil.
4) Stir in lentils and simmer for 30 minutes.
5) Stir in ham and pasta and bring to a boil for 2 minutes. Reduce to simmer.
6) Stir in spinach. Cook until spinach wilts.
7) Serve and garnish with parmesan.
