I know you’re thinking this sounds weird, but you have to trust me on this one.
I was trying to use seasonal ingredients and came across a bundle of kiwis in the produce aisle. I pictured chicken and skewers immediately.
My husband watched me assemble the kabobs when I came home and had a look of fear on his face. I am lucky that he is willing to try just about anything. He was the first one to tell me, “Dinner is delicious!” He trusts me! The kids do too!
What You Will Need:
1 lb thinly sliced boneless, skinless chicken breasts, cut into pieces
7-8 wooden skewers
3 medium kiwis, thickly sliced
½ large sweet onion, chopped
1 large green pepper, chopped
1 lime
What You Already Have:
1 T Cajun seasoning
½ tsp sweet paprika
2 T olive oil
grill
large casserole
water
1) Soak skewers in water for 30 minutes.
2) Prepare grill.
3) Season chicken with paprika and Cajun seasoning.
4) Assemble skewers. Layer chicken, pepper, onion, kiwi and repeat until no more left.
5) Transfer to casserole.
6) Squeeze half of lime over skewers and drizzle with olive oil.
7) Grill until chicken is no longer pink.
8) Squeeze second half of lime over grilled skewers.
9) Serve.
