Grilled Lamb Chops w/Guinness

We had to celebrate St. Patrick’s Day yesterday somehow. We had some lamb chops in the fridge and I bought some Guinness for my husband. I decided to put it all together with some scalloped potatoes and broccoli. The weather was perfect for grilling, so I put together something that my husband and I could do together. He loves any excuse to use the grill. I love it when he does the grilling!
When the girls saw that we were having “steak” for dinner, they were ecstatic. When they tasted it, they were even more excited. It was fantastic.

What You Will Need:
¾ lb lamb chops, bone in
12 oz Extra Stout Guinness

What You Already Have:
2 T unsalted butter
1 tsp rosemary
1 large garlic clove, chopped
1 tsp salt
freshly ground black pepper
½ tsp mint
1 T olive oil
1 T Worcestershire sauce
non-stick skillet

1) Season lamb chops with salt, pepper and rosemary. Drizzle with olive oil.
2) Melt butter in skillet. Add garlic and sauté until fragrant.
3) Pour in beer, Worcestershire, mint, salt and pepper.
4) Bring to boil and reduce until sauce thickens.
5) Prepare grill.
6) Grill lamb chops until thoroughly cooked. (Meat thermometer should read 145°-150°F. Let rest.
7) Serve with potatoes and greens.
8) Pour sauce over top.
