My Secret Recipe for Spaghetti and Meatballs

     I don’t know why I am revealing this stellar recipe to the public. I should keep it to myself and lock it in a safe somewhere, but it’s too good. Unless you have a vegetarian in the family, I guarantee everyone will love it. It’s incredible!
The idea came to my mind when I saw leftover pesto begging me to use it in the fridge. Remember when I made those Chicken Pesto Burgers? They were such a hit; I decided to give the pesto a shot in these meatballs.

What You Will Need:
1 lb ground pork
1 T pesto
1 large egg
½ yellow onion, finely chopped
1 large garlic clove, finely chopped
½ C panko
1 C baby carrots, steamed
3 T olive oil
1 (14.5 oz) can tomato sauce
1 (6 oz) can tomato paste
1 C low sodium chicken broth

What You Already Have:
1 tsp salt
¼ tsp freshly ground black pepper
1 tsp sugar
1 tsp dried oregano
1 tsp dried basil
1 tsp dried parsley
½ C grated parmesan
large non-stick skillet
large deep skillet with lid
large pot
medium bowl
2 large plates
food processor

1) Mix pork, pesto, ¼ onion, panko and egg in medium bowl.
2) Heat non-stick skillet over medium-high heat. Add 2 T olive oil to skillet.
3) Form 13-14 meatballs and transfer to plate. Brown meatballs in two batches in skillet.
4) Meanwhile, heat 1 T olive oil over medium heat. Add garlic and remaining onion to other skillet.
5) Sauté until onion is translucent.
6) Stir in tomato sauce, tomato paste and chicken broth.
7) Purée carrots in food processor. Add 1 T tomato mixture to carrots to help purée.
8) Add carrots to tomato sauce in skillet. Stir until smooth.
9) Season with salt, pepper, sugar, oregano, basil and parsley. Bring to a boil and reduce to simmer.
10) Add meatballs to sauce and cover. Simmer for 10 minutes.

11) Serve over pasta and garnish with parmesan.

We always add carrots to our sauce usually I just grate it though. What is panko? I'm going to have to go google that, once again you've made me hungry!!

What a great idea to use pesto in the meatballs! I love pesto, and often have some left-over, which I usually spread on pizza or toasted sandwiches, but I'll have to try this.
