Grilled Pork w/Strawberry Sauce

My favorite recipes are turning out to be those that I make up as I go.

I’m thoroughly enjoying this experiment we all know as my blog. It’s forcing me to be creative.

I used to paint before the kids entered our lives. There’s no time for it now. Cooking has become my creative outlet. I think I like it more than painting!
Chopped strawberries

As I entered the kitchen this night, my intention was to grill some pork and slop it over a bed of lettuce with some chopped strawberries. My salad idea disappeared when I discovered that the lettuce was not in the fridge. Oops, I forgot to pick some up at the store. I improvised and turned the strawberries into a sauce for the grilled chicken.

I’m very proud of the outcome.

It was simple for anyone to make and it tastes fantastic.

What You Will Need:
1 lb boneless pork chops
1 tsp dried rosemary
1 tsp dried basil
¼ tsp salt
¼ tsp freshly ground black pepper
2 T red wine vinegar
1 large clove of garlic
2 C fresh strawberries, stems removed and chopped
½ C sugar
½ C water
1 grill pan
medium sauce pan with lid jar with lid strainer

1) Preheat grill pan over medium heat.
2) Add strawberries, sugar and water to sauce pan. Bring to a boil. Cover with lid and reduce to simmer for 10 minutes.

3) Separate syrup and strawberries with strainer over jar. Reserve syrup for another use. (Great for pancakes)
4) Season pork with rosemary, basil, salt and pepper.
5) Grill on both sides until no longer pink.

6) Add strawberries back to sauce pan. Heat over low heat.
7) Stir in vinegar and garlic.
8) Reduce to cook vinegar.
9) Plate grilled pork and pour sauce on top.
10) Serve.

YUM! We do apple butter on our pork chops. I've never thought to do strawberry sauce. Sounds like a delicious idea. :)

This sounds so good, and we are having pork tonight, and was thinking about trying something new. Guess what I bought at the grocery store just a few hours ag0 - you guessed it - strawberries. Looks delicious! My husband won't even allow strawberries in the house he hates them so much. I'll have to think of a creative way to try this one out!
