This is one of my favorite recipes to get the kids to fill up on their protein.
These days it’s becoming more and more difficult to get them to eat anything but pb&j sandwiches.
I am a firm believer that you serve only one option at dinner. Kids shouldn’t choose what you are having. You have to lighten up a little bit if you want them to really eat it though.
Most of my dishes are great tasting for the adults along with the kids. They loved this one!
What You Will Need:
1 lb thinly sliced boneless, skinless chicken breast
1 C fresh basil, coarsely chopped
1 tsp dried basil
½ tsp ground oregano
2 C panko
2 T olive oil
1 C grated parmesan
½ C grated mozzarella
1 C pizza sauce
2 garlic cloves, finely chopped
2 deep pie plates
1 large non-stick skillet
1) Preheat oven to 350°F.
2) Cut chicken into slices.
3) Mix panko, oregano, dried basil, fresh basil and ½ parmesan cheese in pie plate.
4) Coat chicken in panko mixture.
5) Heat olive oil in skillet over medium-high heat.
6) Add garlic to skillet. Cook chicken on both sides.
7) Transfer to plate lined with paper towel.
8) Cook until all chicken is cooked.
9) Spoon 2 T pizza sauce on bottom of pie plate.
10) Layer chicken on bottom of pie plate.
11) Spoon pizza sauce over top of chicken.
12) Sprinkle remaining cheese over top.
13) Bake for 10-15 minutes.
14) Plate chicken and garnish with fresh basil.
15) Serve.
