Super Easy Spring Rolls

Summer time is crazy around these parts! If it’s not one thing it’s the next, right? And who really feels like cooking when it’s been 100+ degrees outside… not me! I’ve really been struggling to come up with some new stuff because I’d much rather be at the beach or the pool!

Here’s a super-duper easy one that is very similar to My Own Soft Spring Rolls and Slow Cooked Spring Rolls. You’ll love it because it takes a very limited amount of time to prepare and it’s refreshing enough for summer! Enjoy!

What You Will Need:
1 lb thinly sliced boneless and skinless chicken breasts (about 5-6)
4 heaping T hoisin sauce
1 T soy sauce
½ C chopped spring onions
¼ C chopped celery
½ C chopped cucumber
¼ C diced carrots
½ pkg uncooked rice noodles
6-8 pieces uncooked rice paper
Sriracha (optional)
Olive oil
sesame seeds

1) Heat 1-2 T olive oil in large skillet over medium-high heat.
2) Cook chicken until no longer pink.
 3) Stir in hoisin and soy sauce.
4) Mix in vegetable and cook until veggies are tender.  Sprinkle with sesame seeds.
5) Cut chicken into strips with spatula.
6) Prepare rice noodles according to package directions. Drain.
7) Dampen rice paper and assemble spring rolls with chicken mixture and rice noodles.
8) Garnish with a little bit of Sriracha.
9) Serve.
