Chicken Pad Thai



I love it when every meal turns out to be a hit during the week. There were no silly faces, just happy ones. I’m in love with this recipe too.











I found the original one on www.bhg.com. I changed just a few things to cater towards what the kids would eat.

Wow, this was fantastic!! You have to try it. It’s not hard! And you’ll impress yourself!

What You Will Need:
Thai rice noodles (package includes two packets- use both)
1 lb thinly sliced boneless skinless chicken breast, cut into strips
1 lime, grated and juiced (reserve both)
¼ C finely chopped peanuts
1 tsp onion powder
½ tsp Sriracha
2 T soy sauce
2 T ketchup
2 T brown sugar
1 T olive oil
1 garlic clove, finely chopped
1 egg, beaten
2 green onions, chopped
1/2 green pepper, sliced

1) Mix peanuts and 1 tsp lime peel in small bowl.
2) Whisk Sriracha, lime juice, soy sauce, ketchup, brown sugar and onion powder in small bowl.
3) Heat 1 T olive oil in skillet. Add garlic and sauté for one minute.
4) Add chicken to skillet and brown. Transfer to plate.
5) Scramble egg and transfer to plate with chicken.
6) Add noodles and peppers to skillet and heat through.
7) Stir in dressing, covering noodles.
8) Add chicken, onions, egg and peanuts to skillet.
9) Mix together.
10) Serve.

That looks really good. I love Asian cuisine, but I've never tried cooking much of it. This recipe looks like a good one to start with. Thanks for sharing!

Oh Becky, I'm trying this! I LOVE pad thai and haven't had it in years! I survived on it during my masters program. What is Sriracha? Is it common in stores?
