Chicken and Apple Sausage Marinara





A friend of mine told me she was looking through my recipes and couldn't find something REALLY REALLY easy. Well, take notes because this one couldn't be any simpler and it's very delicious. My husband didn't use all of the sausages for Superbowl Sunday, so I decided to use them for dinner tonight. One of my staples that I purchase EVERY week at the grocery store is some fire-roasted crushed tomatoes. Put these two ingredients together and you've got a dynamite pasta sauce. The girls were concerned because they saw the sausage cooking in the skillet and they things most sausage is spicy. They were relieved to find out that the sausage was chicken and apple! I got two jumps and hollers from them. My husband walked into the kitchen and asked, "What's that smell? Smells great."


So now here is the easiest dinner and it tastes great too.

What You Will Need:
4-6 chicken and apple sausages
1 T lemon-infused olive oil
1 (15 oz) can fire roasted crushed tomatoes
1 (6 oz) can tomato paste
3/4 C chicken stock
1/2 C water
1 small to medium yellow onion, chopped
1 tsp dried basil
1 tsp dried parsley
1/2 tsp ground oregano


1) Heat olive oil in iron skillet over medim-high heat.
2) Brown sausages and onion in skillet until slightly charred.
3) Transfer sausage to plate to cool. Cut into 1 inch pieces.
4) Add tomatoes, paste, chicken stock, water and seasoning to skillet.
5) Add sausage back into sausage.
6) Simmer for 10 minutes.
7) Serve over pasta.
