Blueberry Smoothies Improved
It wouldn't be summer without a trip to the Swift CreekBerry Farm
We love this magical place. When you arrive the fields of blueberry plants, the natural beauty takes over. It's incredible how many rows they have here.
We made the quick trip a few weeks ago, but they didn't close the season until just this past weekend. They will open again for pumpkin season this fall.
The blueberries were plentiful and always are. The nice staff provided us a couple of buckets, led us to the best plants. It was hard not to stand there and eat blueberries all day! They were perfectly plump and sweet! Between the four of us, we picked 7 lbs of berries!! We probably had another pound in our tummies.
On the way back, we named all of the different things we could make with blueberries. When we got home, the girls begged for a blueberry smoothie and my husband and I wanted one too! And we certainly had plenty to make a million smoothies and muffins and salads and pancakes and syrup..
1 1/2 fresh blueberries
4 oz blueberry Greek yogurt
2 T frozen Cool Whip
1/2 C milk
1/2 C ice
Combine all ingredients in blender (milk first) and blend until smooth. Pour into glass and enjoy!
I rinsed the remaining blueberries and drained the water. After the blueberries dried, I added them to freezer containers and froze for future use. The awesome thing about these frozen blueberries is that I don't need any ice when making the smoothies anymore. They taste incredible and are still sweet! The girls love to have the blueberries over their cereal in the morning and they come in handy at snack time too. Something about frozen blueberries makes them that much neater to the kids!
