Well, well, what do you have for dinner on a night like tonight? It’s Election Day! This is such a historic race, so it should be a good meal.

I popped over to Rachel Ray’s website the other day looking for something that used prosciutto and chicken. Remember when I made Chicken and Prosciutto Stuffed with Mozzarella and Spinach? I wanted to create a similar dish. Rachel’s version is more like a stew, so it’s perfect for this season.

I adapted her recipe and left out a few things and used chicken breasts instead of thighs. It turned out to be pretty tasty, but next time I won’t bother wrapping the chicken. I’ll chop the bacon up and cook it first then I’ll simply pan fry it in bacon fat. Yum.
