Tonight we had one fantastic dinner! I’m going to immediately let you know that this one is in no way original or mine. I followed the directions I found online and really didn’t change much.
I found a box of prepared polenta in the pantry that must have been from my crazy shopping trip pre-holidays. I also had some frozen chicken breast tenders in the freezer.
While watching the Today show the day after Thanksgiving, they had a short bit on what to do with leftovers. It was really helpful because the chef recommended making meatballs.

Dinner was so good tonight. I knew it would be when I was adding 6 oz of soft garlic and herb cheese to an already juicy and tender rotisserie chicken.
While preparing for Sandy, you have to be mindful about the kind of food you have in the house. You need to be prepared to eat what’s left in the fridge and not depend on much that needs to stay cold.
I had two peaches that needed to be eaten immediately and just loved the Chicken and Peach Cob-absthat I made last summer.
Summer time is crazy around these parts! If it’s not one thing it’s the next, right? And who really feels like cooking when it’s been 100+ degrees outside
